  inquire with their institutions about credits.  The recommendation is
  5 ECTS  (preparation time + class time and assignment 125 hours)\nAppli
 cation deadline: Nov 7\n\nStructural properties of food are multi-dimensio
 nal and we therefore need to understand their structure at various length 
 and time scales. They control storage qualities\, uptake and nutritional v
 alue as well as texture and perception. Key challenges for food scientist 
 and product developers in academia and food industry concerns the whole pr
 oduction\, from raw material quality\, starting with seed quality and plan
 t breeding\, to food processing and the final product. The quality of the 
 product is also determined by packaging and how the food interacts with pa
 ckaging during storage and consumer handling.  \n\nTechniques available a
 t Large-Scale Research Infrastructure MAX IV Laboratory and the European S
 pallation Source\, ESS\, include spectroscopic\, imaging and scattering te
 chniques based on either X-rays or neutrons. These techniques allow us to 
 obtain detailed compositional maps of food materials and obtain structural
  information ranging from the atomic\, nano- to the micrometer scale not o
 nly of the final products\, but also during processing and when the food p
 roduct is digested.\n\nThis is the second Northern Lights on Food Mastercl
 ass. During the initial 2.5 days you will acquire basic knowledge of selec
 ted techniques accessed in large scale facilities\, and how to design expe
 riments with particular attention to the complexity of food systems. We wi
 ll  this year then focus on imaging and you will also be able to attend a
  practical demonstration of tomography and provide you with the basic know
 ledge on imaging analysis.\n\nApplications to be received by November 7\, 
 2021\n\nAfter the deadline for registration a committee will decide which 
 applicants are accepted for the Masterclass. The selection will be based o
 n the applicants’ letter of motivation (maximum 1 A4) that must be inclu
 ded in the registration. The motivation letter should declare the applic
 ants’ research focus and what they want to gain from neutron and X-ray b
 ased methods. We aim at having a group of selected candidates representing
  a good distribution in food-related research topics and priority of accep
 tance will be given to applicants with relevant research questions.\n\nThe
  Masterclass is organized with funding support from Formas and LINXS and i
 s free of charge. The number of participants is limited to 25 students.\n\
 nA no show fee of 1500 SEK will be imposed.\n\nThe lectures will cover fol
 lowing areas and techniques:\n\n\n	\n	       Elemental mapping/obtai
 ning chemical information in soft and biological tissues\, (X- ray\n	   
     absorption spectroscopy)\n	\n	\n	       4D imaging of food stu
 ffs at high resolution (down to 30nm)\, (X-ray and neutron\n	       to
 mography)\n	\n	\n	       Structural information on the atomic scale\
 , (X-ray and neutro diffraction)\n	\n	\n	       Structural information
  of disordered or partially ordered materials in the nanometer to\n	    
    micrometer range\, (small-angle X-ray and neutron scattering\, SAXS a
 nd SANS)\n	\n	\n	       Structural information of surface propertie
 s of materials\, (grazing incidence SAXS and\n	       SANS and neutro
 n reflectometry)\n	\n	\n	       Complimentary techniques including r
 heology and microscopy\n	\n\n\nThe course will focus on methods\, availabl
 e instruments and experimental environments\, data evaluation tools and mo
 deling approaches as well as limitations of the techniques and some comple
 mentary techniques. The techniques will be explained through general and w
 ide overviews\, as well as specific and detailed examples. The selected a
 pplicants will be requested to prepare a one slide summary of their resear
 ch project/interests at the start of the Masterclass as well as a literatu
 re scan on their project topic in preparation for beamtime application wor
 k. The applicants will also be requested to design a beamtime proposal bas
 ed on their own research at the end of the course.\n\nDue to the current C
 oronavirus pandemic and imposed travel restrictions some of the lectures m
