DESCRIPTION:\n\nThe Northern Lights on Food collaboration supports basic a
nd applied interdisciplinary food research by enable researchers in the fo
od field to take full advantage of the new research tools provided by Larg
e Scale Research Infrastructure (LSRI)\; ESS and MAX IV in Lund. Our aim i
s to enable the development of the food of the future through greater unde
rstanding of the basic structures and dynamics of food\, its raw materials
\, and components. Northern Lights on Food was established more than three
years ago jointly by industry\, academia and LSRI. The effort was trigger
ed by the need to tackle the key research challenges required to transform
the current food system so that future production is sustainable and envi
ronmentally friendly\, and the food we eat improves our health and well-be
ing. Last year Northern Lights on Food became a theme within Lund Institut
e of Advanced Neutron and X-ray Science -LINXS.\n\nDespite the pandemic\,
we have seen a large increase in the interest to join and promote the NLF
idea. During the last year we have thanks to support from the Skåne regio
n\, Swedish Agency for Economic and Regional Growth\, EU European Regional
Development Fund\, Vinnova\, The research and innovation council of Skån
e (FIRS) and LINXS\, being able to strengthen our activities that started
with support from Formas. We are moving forward and are proud to announce
the third Northern Lights on Food Conference\, June 1-3 2022 as a live eve
nt in Lund. This year we have the pleasure to welcome a range internationa
lly well-renowned researchers coming in person from around the world from
Los Angeles to Sydney. They also represent interdisciplinary research need
ed to tackle the challenges\, but also the opportunity the food sector fac
es. The conference addresses challenges concerning the whole food sector f
rom agriculture\, food technology\, processing and engineering\, environme
nt\, medicine and nutrition\, as well as the consumer and society.\n\nYou
